Healthy Minestrone Soup Recipe

This is one of my favourite easy soups to make after work or to bring with me to work as it keeps really well and you can make a big batch for inexpensive delicious lunches! Recipe below.

Ingredients:
-4 carrots
-3 celery stalks
-4 cloves of garlic
-Parmesan rind to give the soup flavour, and enough, grated to top the soup
-1 onion
-2 parsnips
-1 bunch of kale, washed and torn
-1 small can tomato paste or crushed tomatoes
-herbs to your liking
-2 cans of beans of your choice
-chicken stock or base or vegetable stock
-salt, pepper and olive oil
-About 200 grams of elbow or ditalini pasta

Directions
Chop all ingredients. Heat the olive oil in a large pot over medium-high heat. Add the onion and cook until translucent, about 4 minutes. Add the garlic and cook 30 seconds. Add the celery and carrot and cook until they begin to soften, about 5 minutes. Add herbs, spices, salt and pepper.

Add tomato paste and the chicken base to the pot with about 10 cups of water and bring to a boil. Reduce the heat to medium low and simmer 1-2 hours. Stir in the kidney beans and pasta and cook until the pasta and vegetables are tender, about 10 minutes. Season with salt. Ladle into bowls and top with the parmesan.
