InTheCellar - Wines that "Bubble" - Short Version - Live Sabering from JJ's!!
Dom Perignon may or may not have actually said "Come quickly, I am tasting the stars..." when he first sipped sparkling wine, but for sure he was impressed! Take 10 minutes and let Marquee share with you about a few of the world's wines with bubbles as we discuss Champagne, Sparkling Wine, Prosecco, Cava, Sekt, Vinho Verde and more!
In our eight episode of In the Cellar, we head to The world famous JJ's restaurant in Kansas City and include owner Jimmy Frantze as our guest to help us look at sparkling wine and Saber off the top of a wine bottle! If you have never seen this done, it is a real treat and get the story of Sabering as well as where the shape of different types of Champagne glasses comes from (hint, hint, this may also deal with Marie Antoinette) in this exciting episode of Wines that Bubble!
The first wine we review is a Vinho Verde from the Portuguese north called Blue Fin. Vinho Verde is a white wine that is made whereby at the end of the bottling process a slight "frizante" essence is captured to give it a small carbonated bubble feel. Not exactly a sparkling wine, we thought this exciting wine was a great way to teach about Wines that Bubble, outside those you know as "Champagnes Method" wines. The 2009 Blue Fin VInho Verde is a light, tropical influenced wine with strong acids and a lemon/ lime zest flavor. At a lower alcohol % than most table white wines this makes for a great aperitif or wine with seafood at the start of the meal!
For the second wine we showcase a specialty wine that Jimmy Frantze found several years ago when on wine tour in France, this is a sparkling Bouvet Rose from the Loire Valley Region in France. Not from the common grapes of Chardonnay, Pinot Noir or Pinot Meniuer that you traditionally think of with Champagnes, this wine is a sparkling wine made from Cabernet Franc! An intense copper/peach color shows through in the glass and the fresh fruit tones, the winery sells a special allocation just to JJ's restaurant so you will have to stop in to check it out, always on the BTG (By the Glass) menu, this treat is lovely and well worth the modest price!
In the Kitchen and Marquee send out a special thank you to JJ's and Jimmy for also demonstrating for us the exciting tradition of "Sabering" a bottle open of sparkling wine, hear the story straight from the man himself that has cut open over 15,000 bottles since bringing this time honored technique back with him to the United States! If you are in the restaurant, he may even indulge you if you catch him in the right mood (but watch out the edge of the glass is sharp, even cut at a fairly straight angle!
