Life on a TUGBOAT in NYC
This video is all about my daily life at work on a tugboat. For all the people who ask me what I do it is kind of hard to explain in one sentence. Vegan butternut squash soup!
One onion chopped
2 tbs vegetable oil
3 garlic cloves minced
one butternut squash, skin peeled and seeded
3 cups vegetable broth
2 cups sliced tomato or one can
3 handfuls of kale or spinach
1 can lentils
2 tbs pepper
2 tbs cumin
2 tbs creole seasoning
cayenne pepper if you like to get spicy with it
I start by cooking the chopped onion, about 5 minutes in my pot. Add minced garlic and do not over cook, maybe 2 to 3 minutes. Add chopped butternut squash, lentils, tomato then add vegetable broth. If the butternut squash is not floating or covered in the broth I add a little bit of extra water. Mix around then add pepper, Creole seasoning, Cumin, and Cayenne pepper. Add spinach or kale. Cover and let it simmer until the butternut squash is nice and soft. Be careful not to make it too soft though.
