Welcome to the Patriot Coffee Lab! Today we are discussing the pros and cons of the Chemex, why you may enjoy using it, and our favorite Chemex technique which highlights the acidity in the coffee, offers even extraction, and results in a very clean cup.
Recipe:
45g fresh coffee, ground on a medium-coarse setting
720g filtered water, heated to 205 degrees F
1. Open the Chemex filter into a cone, with one side containing three layers of paper, and one side containing one layer. Place it in the Chemex with the side containing three layers facing the spout. Wet your filter with hot water and dump rinse water.
2. Add 45g ground coffee to the rinsed filter. Tare your scale.
3. Start your timer. In concentric circles, saturate your grounds with 80-100g of water. This should take no more than 7 or 8 seconds. Coffee degasses or “blooms” when it’s fresh–the coffee bed should rise up and bubble a bit.
This practice of pre-wetting your grounds helps ensure even extraction. (Yay!)
4. After 30-40 seconds have passed, add water to 500g, always pouring steadily in concentric circles, and moving quickly to provide turbulence. Avoid wetting the filter; water will trickle down without hitting the grounds, thus diluting the brew. Use a spoon to stir the solution and ensure all the ground are incorporated in the brew.
5. At the 2 minute mark, add water to 720g (again – moving quickly in concentric circles.) Remove the Chemex from the scale and give a light tap on counter to ensure all grounds get fully immersed.
6. Allow the coffee to finish brewing and remove your filter. Your brew time should be between 4 minutes and 4:30. If it takes substantially longer, use a coarser grind.
