How to make icing

The perfect buttercream
Makes 1 batch Prep 10 mins

2 x 540g Coles Make at Home White Mud Cakes
Buttercream
250g butter, softened
3 cups (450g) icing sugar mixture
2 tbs milk
Liquid food colouring, to tint (optional)

1 To make the buttercream, use an electric mixer to beat the butter in a bowl until very pale. Gradually add the icing sugar, beating well after each addition. Add milk, beating until well combined. Use food colouring to tint, if using.
2 Top 1 cake with ½ cup of the icing. Layer remaining cake on top. Spread top and sides with butter frosting and smooth the surface.

The perfect royal icing
Makes 1 batch Prep 10 mins

Royal icing
2 Coles Australian Free Range Egg whites*
2 tsp lemon juice
3 cups (480g) pure icing sugar, sifted
Shortbread biscuits
125g butter, softened
1/4 cup (55g) caster sugar
1 cup (150g) plain flour
1/4 cup (45g) rice flour

1 To make the shortbread biscuits, use an electric mixer to beat butter and caster sugar in a bowl until pale and creamy. Stir in plain flour and rice flour until dough comes together. Shape into a disc.
2 Preheat oven to 160°C. Line 2 baking trays with baking paper. Place the dough on a lightly floured surface. Roll dough out on a lightly floured surface to a 3mm-thick disc. Use a 7cm round fluted pastry cutter to cut discs from the dough, rerolling the excess. Place on the lined trays.
3 Bake, swapping trays halfway through cooking, for 10-15 mins or until light golden. Set aside on the trays to cool completely.
4 Meanwhile, to make the royal icing, whisk the egg whites and lemon juice in a large bowl. Gradually add the icing sugar, stirring after each addition until smooth, adding more icing sugar if necessary to make a thick paste. Transfer to a piping bag fitted with a 1mm plain nozzle.
5 Decorate cooled biscuits with royal icing.

*This recipe uses raw egg. We recommend that pregnant women, young children, the elderly or people with compromised immune systems do not consume raw egg.
