Beyond the Kitchen: Menya Rui owner Steven Pursley reflects on time in Japan in new St. Louis
Steven Pursley spent three years in Japan learning the intricacies of scratch-made ramen. That experience, alongside several pop-up restaurants, led to the creation of Menya Rui, Pursley's first experience as a chef-owner after spending most of his professional career in kitchens.
In a first for the St. Louis area, Pursley makes the noodles himself. Everything served at Menya Rui comes from raw plant and animal products.
The doors of Menya Rui, at 3453 Hampton Avenue, open on Thursday, April 20.
