Ingredients:

1 cup preserved mustard green
1 salmon head
6-8 ginger slices
3 scallion
1 tbsp oil (to cook preserved mustard green )
1/2 tsp sugar (to cook with mustard green
1/3 cup cornstarch (coat with fish head before pan frying )
1 tbsp oysters sauce
2-3 cups water

Fish head marinate :
1/6 tsp salt
1/2 tsp sugar
1 tsp soy sauce
2 tbsp Shaoxing wine

1 碗 甜梅菜
1 個 三文魚頭
6-8 塊 薑片
3 棵 蔥
1湯匙 有 (炒梅菜 )
1/2 茶匙 糖 (梅菜調味)
1/3 杯 粟米淀粉 (上粉用 )
1 湯匙 蠔油
2-3 杯水

魚頭醃料 :
1/6 茶匙 鹽
1/2 茶匙 糖
1 茶匙 生抽
2 湯匙 紹興酒
