Quick and easy, three ingredient vegan pasta | healthy mushroom and spinach pasta

I've been trying to eat more veggies lately, and this mushroom and spinach pastas is one of my faves. I use whatever pasta/noodles I have in the house and just toss everything in a pan.

Ingredients

1 pack of chestnut mushrooms
1 pack of baby spinach
Pasta/noodle of your choice
Olive oil
Garlic
2 and a half tablespoons of soy sauce
Garlic salt/salt
Black pepper
Chilli flakes (optional)
Onion granules (optional)
Half a lime

1. Boil you pasta/noodles al dente

2. Whilst the pasta is boiling, add a tablespoon of olive oil into a hot pan and chuck in your mushroom. Add some salt and cook for 5 mins, until they have released their juices

3. Add the garlic, as much as you want. Cook this for a couple of minutes, make sure not to burn if you are using fresh garlic. Add the soy sauce.

4. After a minute, add the spinach, your pasta/noodles, and some of the reserved pasta water (about a third of a mugs worth) Stir everything together

5. Season with garlic salt/salt, onion granules and chilli flakes (optional)

6. Finish with half of a lime and black pepper. Enjoy!
