Base : Digestive and ginger nut biscuits crumbled with two tablespoons of sugar.
Filling : Soft cheese, strawberries 🍓 icing sugar, (cornflour optional - prevents cracking) vanilla extract, caster sugar.. Add whipped cream gently fold in.. and away you go.

Vegan options :
Base : Coconut oil, vegan butter, almond butter or even raw walnuts..
Filling : vegan cream cheese or coconut cream some lemon juice and cornflour.
