Taro Basque Cheesecake Recipe

Taro Layer Ingredients:

• Taro - 350g, peeled and diced
• Sugar - 20g
• Milk - 15g
• Whipping cream - 30g
• Condensed milk - 15g
• Purple sweet potato powder - 12g (optional for color)

Cheesecake Layer Ingredients:

• Cream cheese - 200g, softened
• Sugar - 40g
• Eggs - 2
• Whipping cream - 170g
• Cornstarch - 12g

Instructions:

1. Prepare Taro Layer:
• Steam the diced taro until soft (about 20 minutes).
• In a bowl, mash the taro until smooth.
• Add sugar, milk, whipping cream, condensed milk, and purple sweet potato powder to the taro. Mix until well combined and smooth.
• Spread the taro mixture evenly on the bottom of a lined 6-inch springform pan. Set aside.
2. Prepare Cheesecake Layer:
• In a separate bowl, mix the cream cheese and sugar until smooth.
• Add eggs follow by whipping cream and cornstarch, then mix until smooth.
3. Combine and Bake:
• Pour the cheesecake batter over the taro layer in the baking tin that layered with baking paper
• Bake in a preheated oven at 200°C for about 25-30 minutes, until the top is golden.
• Allow the cheesecake to cool to room temperature before chilling in the refrigerator for at least 2 hours.
