It’s also the reason why Mr Ham, 3rd generation owner of Tai Chong Kok 大中国, will never sell modern mooncake flavours like durian or chocolate. He stays true to the 87-year long method of baking - using whole duck yolks and olive kernels instead of melon seeds - which his customers, old and new, appreciate.

While the landscape of Chinatown, where their main outlet has been since the beginning, is everchanging, he hopes to retain tradition and heritage the way they know how - through their pastries.
