Tortilla Breakfast Pan Ep.98
Tortilla Breakfast Pan Recipe:
- In a pan on medium - high heat add 1 tsp. each of butter and olive oil
- stir in 3/4 cup of each onions and yellow bell peppers
- add 1 tsp. of Italian seasoning
- add 1/2 tsp. of each salt and pepper
- sauté 4-5 minutes until onions are soft
- stir in 2 cloves of garlic finely diced, sauté 1 - 2 minutes and set pan aside
- in a pan brown 1 lb. of mild Italian sausage
- add the cooked onions and peppers to the cooked sausage, mix well and turn heat off
- stir in 1/3 cup of fresh chopped cilantro ( optional )
- drain and stir in 2 - 10oz. cans of Original RO*TEL ( 284mL )
- apply a coating of cooking spray to a clean 12" non stick oven safe skillet
- Using eight 6" corn tortilla's, place 1 in the centre of the skillet then place the remaining tortilla's around the centre tortilla so the cooking surface is covered
- 2 cups of grated cheese, 1/2 mozzarella, 1/2 medium cheddar
- sprinkle 1/2 cup of the grated cheese on top of the tortilla's, save the remaining cheese for topping
- add the meat and vegetable mixture on top of the cheese and spread evenly ( avoid the juice in the pan )
- pour in 12 well beaten eggs over meat and vegetable mixture
- bake in a preheated 375F oven for 45 minutes until eggs are set
- remove from oven, spread remainder of the cheese evenly on top
- return to 375F oven for 5 minutes until the cheese is melted
- remove from the oven and let rest for 5-10 minutes
- slide entire pie onto a cutting board and slice like a pizza
- garnish with finely diced spring onions and fresh chopped cilantro
- freezes well for work breakfast's, lunches and snacks
