Lahmacun (Thin Meat Flatbread)
Filling Ingredients:
* 1 onion
* 4 small peppers (green/red mixed)
* 2 tomatoes
* 1 heaping tablespoon tomato paste
* A handful of parsley
* 400 g ground beef
* 1 teaspoon red pepper flakes
* 1 teaspoon black pepper
* 1 teaspoon coriander
* 1 teaspoon cumin
Dough Ingredients:
* 4 cups flour
* 1 teaspoon salt
* 1 teaspoon sugar
* 2 cups water
Instructions:
1. Roughly chop the onion and peppers, then pulse them in a food processor until finely minced.
2. Add the tomatoes, tomato paste, and parsley, and process again until well combined.
3. Transfer the mixture to a bowl. Add the ground beef and all the spices.
4. Mix everything thoroughly by hand until you get a smooth, well-combined consistency.
5. Cover and let the mixture rest in the refrigerator while you prepare the dough.

Prepare the Dough:
1. In a large mixing bowl, combine the flour, salt, and sugar.
2. Gradually add the water while kneading.
3. Knead until you obtain a smooth and elastic dough.
4. Cover and let it rest in the refrigerator for about 20 minutes.
Shape the Dough:
1. Transfer the rested dough onto a floured surface.
2. Divide it into equal portions.
3. Shape each piece into a smooth ball (dough ball).
4. Keep them covered to prevent drying.
5. Roll each ball out as thin as possible using a rolling pin.
6. Place the rolled dough onto parchment paper.
Assemble & Bake:
1. Spread about 1.5–2 tablespoons of the meat mixture evenly over the dough.
2. Place it on a baking tray.
3. Bake in a preheated oven at maximum temperature (about 400°F / 200°C+) until the edges start to brown.
Final Touch
1. Remove from the oven and cover with a clean cloth to keep them soft.
2. Since baking time is short, prepare the next one while the previous is baking.
3. You can reuse the same parchment paper for each batch.
