You will learn the critical temperatures for food safety, why they are important, and how to monitor and record them.
We cover all the critical control points in a kitchen – from purchasing, receiving, storage, preparation, cooking, and processing, to food service.
The section on allergens goes over the key allergen groups and labeling rules for New Zealand, Australia, and global markets.
You will understand the science behind an allergic reaction, and how this is different from a food intolerance. We will provide tools to minimize the risks posed to customers with food allergies.
We coach you about handling a customer complaint and how this is acted upon.
We also provide ideas on how to register a food business and keep your compliance costs under control.
Finally, you will understand the importance of date labels and how to fill out food safety records for traceability.
