最简单的鸡蛋灌饼做法,无技巧无难度一看就会/Chinese egg stuffed pancakes

鸡蛋灌饼是用鸡蛋和面粉制作的一道小吃,自我学会后,几乎每周都给孩子们做,刚出炉的鸡蛋灌饼抹上甜面酱再裹上青菜和火腿片等肉类,一顿有菜有面有肉有蛋的营养早餐就完成了,也经常被我装到孩子们的便当盒里去。

我试过不少做鸡蛋灌饼的方法,光面团就试过好几种,凉水和面、热水和面和温水和面的口感都不太理想,凉水温水的太有嚼劲不太适合孩子吃,热水和面就没有嚼劲口感不好,最后我用一半热水和一半凉水制作,这才选对了配方,我还加入了半杯全麦粉代替白面粉更健康。刚出锅的鸡蛋灌饼饼皮酥脆鸡蛋鲜香特别好吃, 关键是用这个方法无技巧无难度,强烈推荐给大家,谢谢观看和订阅!
所用材料 Ingredients

中筋面粉 all-purpose flour 1 cup (165g)
全麦面粉 whole wheat flour 1/2 cup(75g)
盐 salt 1/2 teaspoon
热水hot water 1/3 cup(70g)
凉水cold water 1/3cup(70g)
橄榄油 olive oil 2 tbsp
鸡蛋 egg 3
小葱green onion

这个配方制作的面团大概在400克左右,分成6个小面团可做三张20-25CM左右大小的饼胚,每个饼胚里可灌入一个鸡蛋,中火烙制,熟练了后每个饼大概需要3、4分钟就可完成。
