Neapolitan Cookies – A Colorful Classic
Ingredients:
- 2½ cups + 1 tbsp (364g) all-purpose flour
- ¾ tsp baking soda
- ¾ tsp salt
- ½ cup (about 8g) freeze-dried strawberries, measured before blending
- 1 cup (227g) unsalted butter, softened
- 1¾ cups (350g) granulated suga
- 1 large egg + 1 yolk
- 2 tsp vanilla extract
- 2 tbsp Dutch-process cocoa powder
- Optional: 2–3 drops red food coloring
- Sprinkles or granulated sugar for coating
Instructions:
Prep Your Oven:
Preheat to 350°F (180°C) and line three baking trays with parchment paper. Set aside.
Mix Dry Ingredients:
In a bowl, whisk together the flour, baking soda, and salt.
Make Strawberry Powder:
Use a food processor to grind the freeze-dried strawberries into a fine powder. Set aside.
Cream Butter & Sugar:
In a stand mixer fitted with a paddle attachment, add melted butter and mix your sugar (about 2–3 minutes).
Add Eggs & Vanilla:
Mix in the whole egg, extra yolk, and vanilla until just combined.
Incorporate Dry Mix:
With the mixer on low, add the dry ingredients and mix until a dough forms.
Divide & Flavor:
Split the dough into three equal portions:
Strawberry dough: Mix in the powdered strawberries (and food coloring if desired).
Chocolate dough: Blend in the cocoa powder.
Leave the last portion plain for the vanilla layer.
Form Cookies:
Take small pieces of each dough (about 15g total), press them together slightly to form a tri-color ball. Roll in sugar or sprinkles, then place on the baking sheet.
Bake:
Bake 6–7 cookies per tray for 10–11 minutes, turning halfway through, until the edges are set and they look slightly puffed.
Cool & Store:
Let cookies sit on the tray for 5–10 minutes before transferring to a wire rack. Once cool, store in an airtight container at room temp for up to 2 days.
