**Grandma's Grinch Cookies**
**Utensils**

**Ingredients**
2.5 cups of all-purpose flour
1-1/4 teaspoon of baking soda
1/2 teaspoon of table salt
3.4-ounce box instant pistachio pudding mix
2 sticks of butter, melted
1 cup of granulated sugar
1/4 cup of packed light brown sugar
2 large eggs, at room temperature
1.5 teaspoons of vanilla extract
Green gel food coloring
11-ounce bag of vanilla flavor chips
1 cup of pistachios, ground, divided into half
Red cookie Icing, for heart decorating
**Instructions**
1. In a medium bowl, whisk together the 2.5 cups of flour,
1-1/4 teaspoon of baking soda, 1/2 teaspoon of salt, and a 3.4-ounce box of instant pistachio pudding mix.
2. In a large bowl, combine the 2 sticks of melted butter, 1 cup of granulated
sugar, and 1/4 cup of packed light brown sugar and stir until light and fluffy, about 3 minutes. Gently stir in the 2 large beaten eggs, 1 at a time, then add the 1.5 teaspoons of vanilla. Add the desired amount of green food coloring and mix until well combined.
3. Add the flour mixture a little at a time. Fold in the 11-ounce bag of vanilla flavor chips and 1/2 cup of ground pistachios. Cover with plastic wrap and Refrigerate for 20 minutes. Preheat the oven to 350℉. Line the baking sheet with parchment paper.
4. Scoop a tablespoon of dough into your hand and lightly roll it into a ball, and then into the remaining half of the ground pistachios. Roll the ball into the ground pistachios. Repeat until you have 6 dough balls rolled. Space them on the prepared baking sheet about 2 inches apart.
5. Bake for 12-15 minutes. Let cool for 10 minutes on the baking sheet,
then transfer to a wire rack with a metal spatula to cool completely. Let the baking sheet cool, then repeat with the remaining cookie dough.
6. After cookies are completely cooled, add red icing in the shape of a small heart directly to the right of the center of each cookie. Icing will be hard enough to stack cookies on top of one another after setting for 4 to 5 hours.
7. Store in an air-tight container.
**Yields**
Approximately 4-6 dozen of Grandma's Grinch Cookies.
