DAY 9: Creamy Pesto White Bean Soup (Better Than Olive Garden!) 🍲🌿
Replying to @Cattygirl DAY 9 of my soup series is a pesto white bean soup! hope you love it 🍲
recipe
1. dice 1 yellow onion and add to a pan over medium heat with 1 tbsp olive oil
2. sauté for 5 mins until soft and fragrant, and then add 4 cups of vegetable broth, cover and bring to a boil
3. add 2 cans of cannellini beans, 1/3 cup pesto, 3 cups chopped kale, 1/4 heavy cream, 1/2 tsp fresh ground black pepper, 1/4 tsp red pepper flakes, 1/4 tsp sea salt, and 2 tbsp grated parmesan
4. stir everything together for 2-3 minutes until kale begins to wilt, and take off heat
5. serve with a few dollops of pesto, a sprinkle of red pepper flakes and parmesan, homemade croutons, and enjoy!
