Softened butter - 113g
Caster sugar - 75g
All Purpose Flour - 113g
Baking Powder - 1+1/4 Tsp
Eggs - 2
Zest - 1 lemon
Mint Leafs - 5-6 chopped

Syrup:
Icing sugar - 25g
Lemon juice - 25g

Icing:
Icing sugar - 125
Lemon juice - 1 Tsp
Milk - 3-4 Tbsp until creamy
