🍎Apple Bread Recipe (Asian Apple Buns)

This Asian style apple bread is filled with diced apples and pastry cream. Not only it looks good but also tastes great. Bake them to impress your family!

Ingredients for 6 buns
1.50 cups (about 225 g) bread flour
2 tablespoons sugar
2 teaspoons instant yeast
1 egg
0.45 cup (112 ml) warm milk or water
1 teaspoon (6 g) salt
1.5 tablespoons butter, cold and cut into smaller pieces
1 tablespoon vegetable oil (for brushing the dough)

Filling:
1 medium apple, diced into small pieces (about 1.5 cup)
2 tablespoons sugar

Pastry Cream:
¼ cup (50 g) sugar
1 cup (250 ml) whole milk
1 teaspoon vanilla extract
1 egg
1 tablespoon cornstarch
1 tablespoon all-purpose flour
2 tablespoons butter (room temperature)

Decoration:
Pocky or pretzels sticks
Sliced almonds

Standard Muffin pan (size 13.5 x 8.5 inches, each cavity size: 3.5” top, 2.25” bottom)
6 muffin liners

1. Mix the bread flour, yeast, and sugar together with a spatula.
2. Add in the egg and warm milk.
3. Use a spatula to stir the mixtures.
4. Put on hook attachment and start the machine to knead. After 3-5 minutes, add salt and butter. Knead until the dough is smooth and springy (elastic), about 25-30 minutes by machine. (I use KitchenAid Stand Mixer, speed 2).
Use a stretch test. If the dough can stretch without tearing, that means the gluten is well developed and the dough is ready for rising. If the dough tears, knead the dough for a 1-2 minutes and test it again until it is ready.
5. Spray oil/ grease inside a bowl. Transfer the dough into the bowl, turning it a few times to make sure it is coated with oil. Seal and place it in warm place to rise for 60 minutes. If the weather is very cold, allow extra 15 minutes for bread to rise.
6. While the dough is rising, prepare the apple filling. Dice the apples into small pieces. Add sugar and stir. Put in a heatproof bowl, cover and microwave for 4-5 minutes. Let it cool. Strain extra liquid from apple mixture and divide into 6 portions.
7. Prepare the pastry cream by boiling the milk, vanilla extract and sugar in a saucepan over medium heat. Remove from heat after boiling.
8. Beat the egg and add in flour and cornstarch.
9. Slowly (bit by bit) pour the hot milk into the egg mixture and whisk constantly. This is to prevent the egg from scrambled.
10. Pour all of the egg mixture back into the saucepan and bring it to a boil. Whisk vigorously.
11. Remove the saucepan from heat and stir in the diced butter until smooth.
12. Transfer to a clean bowl and allow the cream to cool completely.
13. Degassing the dough. Punch down the dough to remove the air bubbles and divide it into 6 equal shapes. It is recommended to weigh and measure so all 6 portions are equal size. Roll each portion into a round shape and insert the apple fillings inside. Seal and pinch the dough tightly. Brush with vegetable oil at the bottom of the dough. This is to prevent the paper from sticking to the bread.
14. Line the dough in muffin pan and let it rise for another 60 minutes. Cover with a towel to prevent from drying. If your weather is very cold (winter), allow another 15 minutes to get the “height” that looks nice.
15. Preheat the oven at 350°F (175°C). When the bread has risen to the desired height, bake for 15 minutes and let them cool completely on wire rack. It is recommended to rotate the baking pan after 10 minutes and then bake for another 5 minutes. Total time is 15 minutes.
16. When the apple buns are completely cool down, pipe in pastry cream from the side of the bread.
17. To decorate, insert Pocky stick on top and glue sliced almond with the remaining pastry cream.

NOTES:
Please read the package instruction for the instant yeast. Generally the liquid should be around 120°F (49°C) to activate the yeast. If it is too hot, the water will kill the yeast. If it is not warm enough, it will take longer for the bread to rise.
Do not expose the salt to the yeast directly in the beginning, it will retard yeast growth.
Weather makes a difference in rising. If you live in cold and dry weather, allow extra 15 minutes for first and second rise.
