PUMPKIN SPICE OVERNIGHT OATS!
(THIS IS FOR 1 SERVING - I made 4 servings)
½ cup oats
2 tablespoons almond milk
½ cup pumpkin puree
2 teaspoons maple syrup I use @lakanto sugar free
¼ teaspoon pumpkin pie spice
⅓ cup plain almond milk yogurt
1 teaspoon raw pumpkin seeds
Add oats to a jar or other container and stir together all ingredients. Refrigerate overnight and enjoy in the morning. EASY EASY!
LUNCH: Quinoa Stuffing
4 cups vegetable stock
2 cups quinoa
¼ cup olive oil
1 butternut squash - peeled, seeded, and diced
1 bunch green onions, chopped
1 cup diced dried apricots
1 cup dried cranberries
1 cup chopped fresh parsley
1 lime, juiced, or to taste
STEP 1: Bring vegetable stock to a boil in a saucepan, reduce heat to low, and stir in quinoa. Cover pan and simmer until quinoa absorbs the liquid, 10 to 15 minutes. Remove from heat..
STEP 2 Cook butternut squash. Add in the rest of the ingredients. Drizzle with lime juice to taste. (I like a lot of lime!)
DINER: VEGAN PUMPKIN SOUP
* 1 tablespoon olive oil
* ½ cup chopped onion
* 1 (15 ounce) can pumpkin puree
* 2 cups vegetable broth
* 1 cup Unsweetened Almond Milk
* ½ teaspoon salt
* ¼ teaspoon ground pepper
* ¼ teaspoon ground cinnamon
* 4 teaspoons sliced, toasted almonds
* 4 teaspoons balsamic vinegar
* 4 teaspoons chopped fresh parsley
STEP 1: Heat olive oil in a saucepan over medium-high heat. Add the onion and cook, stirring, until softened, about 3 minutes.
STEP 2: Stir in the pumpkin and vegetable broth. Remove from heat. Transfer to a blender and process 1 minute or until smooth. Return mixture to pan. Return pan to heat.
STEP 3: Stir in almond milk, salt, pepper, and cinnamon. Cook, stirring occasionally for 3 minutes, or until soup is heated through. Divide among 4 bowls and top each with 1 teaspoon almonds, 1 teaspoon vinegar, and 1 teaspoon parsley.
