15-Min Teriyaki Beef Noodle Bowls 🍜 | High-Protein, Cozy & Easy Weeknight Dinner!

Sweet, savoury, and packed with veggies, all in a comforting broth that comes together in about 15 minutes (especially if your beef and veggies are pre-cut 🙌🏼).
Perfect for meal prep, cold nights, or when you just want a flavourful, feel-good meal with minimal effort.
👩🍳 What You’ll Need (for 4 servings):
* 500g lean diced beef
* 2 tbsp cornflour
* 1 tbsp olive oil
* 1 brown onion (finely diced)
* 200g mushrooms (sliced)
* 250g snow peas (halved)
* 1 bok choy (chopped)
* ½ cup teriyaki marinade
* 500ml reduced-salt beef stock
* 500ml beef bone broth
* 4 cloves garlic (crushed)
* ½ tsp chili flakes
* 2 nests thick egg noodles
🥢 Quick Steps:
1. Coat beef in cornflour, salt & pepper.
2. Sear beef in a hot pan. Remove.
3. Cook veggies until tender, then add beef and marinade.
4. Add broth, garlic & chilli. Simmer.
5. Soften noodles in hot water.
6. Serve noodles in bowls, ladle over beef & broth. Enjoy!
