How to make Meat Kibbeh and Vegan kibbeh

Kibbeh TWO WAYS/ same crispy outer shell, two different fillings for the meat lovers and my vegetarian friends.
INGREDIENTS: :المكونات
4 cups of bulgur wheat very fine ٤ كوب من البرغل الناعم
salt to taste ملح حسب الرغبه
1/2 tbsp cumin ٢/١ ملعقه كبيره كمون
1 tsp of tumeric ملعقه صغيره كركم
The vegetarian filling: :حشوه الخضار
1 large Portobello mushroom diced ١ حبه كبيره من مشروم البورتابيلو
1 small onion ١ حبه بصل مفروم ناعما
1 cup of matchstick carrot كوب من الجزر المفروم
1/2 green bell pepper diced ٢/١ حبه كبيره من الفلفل الاخضر الحلو
1/2 red pepper diced ٢/١ حبه كبيره من الفلفل الاحمر الحلو المفروم
2 tbsp of vegetable oil ٢ ملعقه كبيره من زيت المازولا
salt and pepper to taste ملح وفلفل اسود حسب الرغبه
The meat filling: :حشوه اللحمه
1 pound of ground beef ١ باوند او تقريبا نصف كيلو من لحم البقر المفروم
2 large onions finely diced ٢ بصله كبيره مفرومه ناعما
1/2 tbsp salt ٢/١ ملعقه كبيره من الملح
1 tsp black pepper ١ ملعقه صغيره فلفل اسود
1/2 tbsp allspice ٢/١ ملعقه كبيره بهار
1/2 tbsp cinnamon ٢/١ ملعقه كبيره قرفه
3 tbsp of pine nuts toasted optional ٣ ملاعق كبيره صنوبر محمص
