To make lard, remove the non-fat meat for other dishes, and choose fatty, belly cuts. The non-fat meat does not make good lard, since the pieces are likely to burn. When you begin to fry the fatty pieces, add water to the pan and keep the heat high. When the water has evaporated and the oil has come out, turn down the heat. When the fatty pieces have turned a slight golden brown, you can pour out the oil. If the pieces are too brown, then the oil will be brown as well.
