Grandma's Vegan Chocolate Chip Cookie Recipe

1 cup vegetable shortening
1/2 cup white sugar
1 cup brown sugar
1 ripe banana
1 teaspoon vanilla
1 cup rolled oats
2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking powder
6 ounces chocolate chips
1/2 cup shredded, sweetened coconut

Drop by teaspoonfuls onto greased cookie sheets. Bake about 15 minutes at 350 degrees, until golden brown.
