Pumpkin Pasta Alfredo MUKBANG + Recipe!

It isn't fall without a pumpkin pasta Alfredo! I will most certainly film this every year. It's hands down one of my favorite recipes! The hand-rolled fresh pumpkin pasta vid can be found on my TikTok channel @thehungerdiaries and the sauce info is below!

Melt a stick of butter in a saucepan over medium low heat. Brown the butter (I used salted), being careful not to let it burn! You'll know it's done when you see brown specks all throughout the butter. :) Once that's melted, add some cream (I used about a half pint this time), 3/4 C of pureed pumpkin, 1 1/2 cups freshly grated parm, some freshly grated nutmeg and some salt and pepper to taste! The nutmeg is key here guys -- it's pretty strong flavor, so be careful, but don't go too light on it either. You want to taste it! I always grate fresh (you can see about how much in the vid) but if I had to guess it's prob around 1/4 tsp or so. :) Mix that up until it's all combined and the sauce is super smooth, then serve with your fav pasta! And of course, I always recommend reserving some starchy water from your pasta to add to the sauce if you need and especially to help heat up leftovers!
