Plant-Based Pizza with Red Lentil Crust

Ingredients - Crust
• 1 cup dried red lentils, soaked 1-24 hours
• 1/4 cup water
• 1/2 tablespoon dried basil
• 1/2 tablespoon dried oregano
• 1/4 tablespoon Himalayan salt
• 1/2 tablespoon baking powder

Ingredients - Sauce
• 1 container of cherry or grape tomatoes (approx. 1 pint)
• 10-15 garlic cloves

Ingredients – Toppings (or whatever you prefer)
• Mushrooms
• Red Pepper
• Red Onion
• Black Olives
• Jalapeno

Instructions
• Rinse and drain soaked lentils.
• Preheat oven to 400 degrees.
• Blend or process all for the the ingredients until smooth.
• Line a 12” round pizza pan or 9 x 12” cooking sheet with foil lightly spray them with non-sticking cooking spray
• Pour and spread the batter onto the sheet.
• Spread out until it is about 1/4-1/2 inch thick (or whatever crust thickness you prefer)
• Bake for 15-20 minutes until the crust start to brown.
• Top with sauce and veggies (or prefer topping)
• Bake another 10-12 minutes.
• Cool for a couple minutes, slice, and eat!
