AROUND THE WORLD Date Night! | Thailand
For this around-the-world date night, we decided to "visit" one of our favourite countries -- Thailand! Because we're familiar with Thai food, we wanted to push ourselves out of our comfort zone and try to make Khao Soi, a curry traditionally associated with Chiang Mai, in the north of Thailand.

The papaya salad I made from memory, from the time I've spent living in and visiting Thailand:
1 large green papaya
3-4 gloves of garlic, minced
1 cup longbeans, diced
1 cup baby tomatoes, diced
3-4 Thai chilies, diced (this dish is very spicy -- if you don't like spice, do not use any chilies)
1 TBSP fish sauce
2 TSP prawn paste
1 TBSP palm sugar (or brown sugar)
Juice of a lime
Combine the minced garlic and diced chilies in a mortar, and using the pestle, grind and pound them together so that the flavours have ample time to infuse. Add in the lime juice, fish sauce, sugar, and prawn paste and continue to combine to make the sauce for the papaya salad.
Peel your papaya, and then chop it into very thin strips (think, julienne). Put strips in a bowl with chopped tomato and long beans, then add in your sauce over the top and mix together. It's best to let this then sit (I put it in the fridge) for at least 30 minutes so that flavours really soak into the papaya strips.
You can garnish with diced peanuts, but Patrick is allergic so we leave those off.
