Ingredients:
- 1 cup Kuttu (buckwheat) flour
- 2-3 boiled and mashed potatoes
- 1-2 green chilies, finely chopped (adjust to your spice preference)
- Sendha namak (rock salt) to taste
- 1/2 tsp cumin seeds
- Water as needed
- Ghee or oil for cooking

Instructions:
1. In a mixing bowl, combine Kuttu flour, mashed potatoes, green chilies, cumin seeds, and rock salt.
2. Gradually add water and knead the mixture into a soft, pliable dough. The potatoes help bind the dough.
3. Divide the dough into equal portions and roll them into balls.
4. Place a ball of dough between two sheets of plastic wrap or parchment paper and gently roll it into a round parantha.
5. Heat a griddle or tava on medium-high heat.
6. Place the rolled parantha onto the hot griddle and cook until you see bubbles on the surface. Flip it and cook the other side until it's golden brown.
7. Apply ghee or oil on both sides while cooking. This makes the parantha crisp and flavorful.
8. Remove the parantha from the griddle and repeat the process for the remaining dough portions.

Serve your Kuttu ka parantha with yogurt, raita, or a fasting-friendly chutney. Enjoy your meal!
