Barbados Pickle Breadfruit

Breadfruit is a staple in the Caribbean, it is eaten in many different ways and one way is a delicious cucumber pickle.
Recipe calls for

1 breadfruit peeled and boiled in salt water.
1 sweet potato
2 cucumber chopped finely
2 lemons
1/2 bunch of parsley
1/2 onion
salt to taste

Start by boiling breadfruit and sweet potato together
Combine cucumber, parsley, lemon juice, onion and salt together and mix well
When breadfruit and sweet potatoes has cool slice and add to cucumber mixture
Let marinate and enjoy.
