Sept 19 Staying Power
Are you wanting to add more plants to your plate? Family members can sometimes be cautious when it comes to change despite all the health benefits of whole plant-based foods. One part of a meal that most can agree to and be more open to is dessert! So here is a simple and oh-so-delicious whole plant-based recipe: Lemon-blueberry Parfait.
Recipe:
Crumble: Pre-heat oven at 350F
In a bowl: combine with whisk 1 cup large flake oats with 2/3 cup of oat flour and 1/2 tsp of cinnamon then using a fork combine with 5 tBsp of maple syrup. Place crumble on a parchment lined baking sheet and bake at 350F for approximately 10- 12 mins until gold brown. Cool on wire rack.
Lemon Mousse: In a tall milkshake like container, blend together 12.5 oz of Mori-Nu Lite Silken Tofu, 1/4 cup maple syrup. zest of 1 lemon, 3 tBsp of lemon juice (including pulp) and 1 tBsp of vanilla extract. Once blended, cover and chill in refrigerator.
Blueberries - use fresh or frozen - wash and drain thoroughly.
