For years I use to make this delicious Ottoman Turkish layered pastry dessert in one of my restaurants, “Shiraz” in Portland, Oregon. Every single guest we had in the restaurant love it and it was the best seller. The last time I baked Baklava was over five years ago.

Simple syrup:
12 FL. Oz water
12 oz sugar
1c FL. Oz rosewater
½ FL. Oz lemon juice
1 FL. Oz brewed saffron
1 to 2 oz raw honey
1 Lb. crushed pistachio
as needed cardamom
8 oz butter
I pack of phyllo dough
