肉末茄子Stir-fried Chinese Eggplant with Minced Pork **字幕 CC Eng. Sub**
🟢材料:
絞碎豬肉 300 克
茄子 1 條
薑、蒜、紅蔥頭 適量
紹興酒 1 湯匙
生抽 1 茶匙
蠔油 1 茶匙
澱粉 1 茶匙
糖 1/2 茶匙
檸檬汁 少許
鹽、胡椒粉、食油 適量
🟢做法:
1️⃣ 茄子洗淨切丁,用少許檸檬汁(成品帶少許酸味)和食油拌勻防止氧化。
2️⃣豬肉用少許薑末、少許胡椒粉、1/8 茶匙鹽、1/2 茶匙糖、1 茶匙生抽、1 茶匙蠔油、1 茶匙澱粉和少許食油拌勻。
3️⃣爆香薑、蒜、紅蔥頭末,加入豬肉爆炒,再加入茄子丁炒勻。
4️⃣加入適量鹽和 1 湯匙紹興酒,蓋上鍋蓋小火炆 2 分鐘,勾芡上碟。
🟢Ingredients:
Minced pork - 300g
Eggplant - 1 piece
Ginger, garlic, shallots - as needed
Shaoxing wine - 1 tablespoon
Light soy sauce - 1 teaspoon
Oyster sauce - 1 teaspoon
Cornstarch - 1 teaspoon
Sugar - 1/2 teaspoon
White pepper powder - as needed
Lemon juice - a little
Salt, cooking oil - as needed
🟢Instructions:
1️⃣ Wash the eggplant and dice , mix with a little lemon juice (dish come out have a slightly sour taste) and cooking oil to prevent oxidation.
2️⃣ Mix the minced pork with a little minced ginger, with pepper powder, 1/8 tsp salt, 1/2 tsp sugar, 1 tsp soy sauce, 1 tsp oyster sauce, 1 tsp cornstarch and a little cooking oil.
3️⃣ Saute the ginger, garlic, and shallot until fragrant, add the minced pork and stir-fry, then add the eggplant and stir-fry evenly.
4️⃣ Add an appropriate amount of salt and 1 tbsp Shaoxing wine, cover the pan and simmer for 2 minutes, thicken the sauce and serve.
