Sharpening Single Bevel Knives (A Demonstration)- Japanese Knife Imports
In this video, I demonstrate the basic concepts of sharpening single bevel knives. We go over the steps involved in sharpening, hamaguri edges, the importance of shinogi lines, uraoshi sharpening, and more. This is intended to be used in conjunction with our other videos.
