I derped and forgot to put in the clip showing how to set up the SD card.
Basically, just install SD CARD MAKER for GDEMU v1.10

Then download GDMENU (not GDEMU) v0.6.
Install GDMENU into slot '01' inside SD CARD MAKER, then install your game .gdi images into the slots after that. Save, wait for it to do it's thing, then just pop the card into the Dreamcast and you should be good to go.
