Thit Kho Tau Vietnamese Braised Pork and Eggs

This is my version for the Vietnamese comfort food, Thit Kho Tau, Braised Pork and Eggs. It's easy to make and perfect along side, a simple soup and pickled veggies.

Vietnamese Caramelized Pork Thit Kho Tau1
.5-2 lb pork shoulder or belly
1 tbs garlic
2 tbs minced shallot
2-3 green onions
½ tsp sugar
½ tsp salt
½ black pepper
1 tsp fish sauce
1-2 cup coconut juice, water, or sodawater
2 tbs fish sauce
1/2 to 1 tbs soy sauce (start with 1/2 and can add more later)
4 hard boiled eggs

Cut pork into 1.5 inch piecesmarinate with garlic, shallots, white part or green onion, sugar, salt, fish sauce, pepper for at least 2 hr
In pot add 1 tbs oil and 2 tbs sugar and caramelizeadd meat and stir
add coconut juice and water to cover meatbring to boil
add 2 tbs fish sauce, 1/2 tbs soy sauce, eggs, and simmer for 2 hours Adjust seasonings as necessary
Add green onions
