Coconut Shrimp

Ingredients

1 Pound Of Shrimp (Peeled and Deveined)
4 Eggs
1 Cup Of Flour
1 Teaspoon Salt
1 Teaspoon Black Pepper
1 Cup Panko Breadcrumbs
1 Cup Shredded Coconut
Parsley Flakes
Canola Oil For Frying

Directions

Beat Eggs Into Med Sized Bowl
In Seperate Med Sized Bowl Add The Flour, Salt n Pepper Mix Well
In Seperate Med Sized Bowl Add The Panko Breadcrumbs And Shredded Coconut Mix Well
Roll Your Shrimp In Flour Mixture, Then Egg Mixture, Then Panko Mixture Coating Well With Each One
Once All Shrimp Are Coated, Deep Fry In Batches On 350 For Approximately 3 min!
Or, Pan Fry On Med/High Heat With Canola Oil For 2 1/2 Min Per Side
Garnish With Parsley Flakes
Serve And Enjoy!!

Mango Habanero Dipping Sauce

Ingredients

1 Large Jar Of LA VICTORIA Mango Habanero Salsa
1 Cup Chopped Mango (Fresh or Canned)
3 Teaspoons Honey
2 Teaspoons Of Hot Sauce ( I used Tabasco)
1 Green Onion Finally Chopped
1 Whole Fresh Lemon Squeezed

Directions

Add All Ingreadients Into A Med Sized Bowl Mix Well
Serve And Enjoy!!

Another Version (Made For Seafood That's NOT FRIED)

1 Cup Chopped Mango (Fresh or Canned)
1/3 Cup Plain Greek Yogurt
1 Teaspoon Of Lime Juice
1 Chopped Habanero (Seeds and Membrane Optional)
3 Teaspoons Of Honey

Directions

Add The Mango, Yogurt, Lime Juice, Habanero And Honey Into A Blender And Blend Until Smooth
Serve And Enjoy!!

Cucumber Salad

Ingredients

2-4 English Cucumbers
1 Med Purple Or Red Onion
4-6 Med Sized Tomatos
3 Cloves Of Fresh Garlic
1 Cup Red Wine Vinager
1/2 Cup Rice Vinager
1/2 Cup Of Olive Oil
1/2 Cup Of Sugar
1/2 Teaspoon Of Dry Mint Or Chopped Fresh
1/2 Teaspoon Of Oregano
1/3 Teaspoon Of Tarragon
1/2 Teaspoon Salt
1/2 Teaspoon Black Pepper

Directions

Cut Your Tomatoes In Quarters Or Slices
Slice Your Cucumbers Thin With Skin On
Chop/Slice Or Quarter The Purple Onion
In A Large Bowl Add All Veggies
In A Med Sized Bowl Add The 3 Garlic Cloves (Minced)
Add The Vinegar's, Sugar, Olive Oil, Mint, Oregano, Tarragon, Salt n Pepper
Mix Well And Incorparate Your Dressing With A Whisk
Pour On Top Of Veggies Stir Well
Chill In Fridge For 30 Min To One Hour
Serve And Enjoy!!

Lump Crab Salad

Ingredients

1 Pound Of King Crab Meat (Or Imitation Crab)
1 Shallot Minced Or 1 Green Onion Finally Chopped
1 Cup Mayo
1 Cup Of Sour Cream
1/2 Cup Of Celery Finally Chopped
1/2 Teaspoon Paprika
1/2 Teaspoon Of Fresh Chopped Dill (Or Dried)
1/2 Teaspoon Lemon Pepper
1/2 Teaspoon Cajon Seasoning
1 Whole Fresh Lemon Squeezed

Directions

In A Large Bowl Add Crab Meat, Onions And Celery
In A Medium Sized Bowl Add The Rest Of Your Ingredients
Mix Well Until Well Incorporated
Return To Large Bowl With The Crab Meat And Pour Dressing Over It
Fold Softly With Spatula Or Spoon And Mix Well
Chill In Fridge For 30 Min To An Hour
Serve And Enjoy!!

Spicy Cajon Dipping Sauce

Ingredients

1 Cup Mayo
1 1/2 Cups Of Sour Cream
1 Tbls Cajon Seasoning
1 Garlic Clove
1 Whole Lemon
1 Teaspoon Hot Sauce (I Used Tabasco)
1/2 Teaspoon Paprika
1/2 Teaspoon Lemon Pepper
(For Garnish Parsley Flakes Or Green Onion)

Directions

In A Large Bowl Add All Ingredients Mix Well
Chill In Fridge For 30 Min To One Hour
Garnish With Parsley Flakes Or Finally Chopped Green Onion
Serve And Enjoy!!
