If you cultivate your own sweet potato slips, which is a very cool and fun to do, you can grow tons of the most wonderful vegetable in the world at little or no cost. No cost for seed or slips. No cost for fertilizer. Little watering required. Sweet potatoes provide their own living mulch to keep down weeds. Sweet potatoes can be grown for varying lengths of time depending on how big you want your tubers to be. I like them all sizes and put them in the garden as soon as the slips get big enough to transplant, and at later times as space comes available. I grow slips either by cutting pieces of sweet potato and sprouting them in my transplant bed, or by transplanting them directly from tuber to garden. It's a fascinating, fun hobby. I see sweet potatoes as free food and, since food costs a lot these days, it's like growing money!
