Chokkha - Indo-Fijian Eggplant 🍆 Delight

Chargrilled eggplant 🍆 on wood fire 🔥, tantalising taste, marvellous flavours, it’s like a party 🎈 in your mouth!

A classic Indo-Fijian century old recipe from the time of the indentured labourers.

Ingredients:-

2-3 eggplants try larger sizes

Himalayan salt

Bunch fresh coriander

Fresh chopped onions 1 or 2

Fresh chillies to taste 👅

Fresh crushed garlic 6-8 cloves

Olive oil to garnish

Eat as a spread with breads, Rotis, rolls etc!

This may be eaten as a main meal 🥘or as a side dish akin to a relish.

The uniqueness of the smoked wood 🪵 flavour and simplicity of the dish makes it amazing 🤩 !
