Buff/Mutton – 1 kg
Oil/Ghee – 250 g (you can mix both for richness)
Curd (Dahi) – 250 g (whisked)
Onion – 250 g (thinly sliced, fried to golden brown – "Birista")
Milk – 50 ml (warm)
Cashew Nut (Kaaju) Paste – 8 to 10 cashews (soaked and blended into a smooth paste)
Green Chilli Paste – 8 to 10 (adjust to spice preference)
Whole Spices (Sabut Garam Masala):
Bay Leaf (Tej Patta) – 2
Black Cardamom (Badi Elaichi) – 2
Green Cardamom (Choti Elaichi) – 4
Cloves (Laung) – 5-6
Cinnamon Stick (Dalchini) – 1-inch piece
Shahjeera (Caraway Seeds) – 1 tsp
Mace (Javitri) – 1 small piece
Nutmeg (Jaiphal) Powder – 1/4 tsp
Ground Spices (Pisa Hua Masala):
Coriander Powder (Dhania Powder) – 1tsp
Turmeric (Haldi) – 2 tsp
yellow pepper ( longa mirch ) - 2 tsp
Garam Masala Powder – half tsp
Salt – To taste

Ginger-Garlic Paste – 50 g each
