4 VEGAN RECIPES WITH BETTINA CAMPOLUCCI BARDI - @bettinas_kitchen
CHICKPEA OMELETTE
60g of chickpea flour
1/8 teaspoon of bicarbonate of soda
1 teaspoon of apple cider vinegar
125ml of water
Filings are optional:
I love using hummus, avocado & tomatoes.

SEEDED CRACKERS
For the Seeded Crackers
85g of sesame seeds
85g of flaxseeds
65g of pumpkin seeds
65 g of sunflower seeds
250ml of water
30g of gluten-free flour mix

BORTH & GREENS
1⁄2 yellow onion, sliced
3 garlic of cloves, chopped
1 teaspoon of five-spice
1 tablespoon of miso paste
1 cinnamon stick
500 ml of vegan stock
2 pak choy, cut in half
100 g of tenderstem broccoli, cut in bite-size pieces
1 handful of kale
260 g of pre-cooked brown or white rice
1 thumb-sized piece of ginger root, freshly grated
1 tablespoon of tamari
Olive oil, for frying

QUICK CURRY
For the Paste
2 cloves of garlic
1 piece of fresh turmeric root
1 inch/thumb of fresh ginger
1/2 shallot
1/2 to 1 fresh chilli
60ml of olive oil
Salt & pepper
400ml of coconut milk
1 courgette, sliced
1 onion, diced
200g of pumpkin, peeled & chopped into 2cm cubes
30g of red lentils, rinsed
30g of rice, rinsed
Handful of fresh greens – spinach / kale / herbs
1 tbsp of sesame seeds
