TRIPE STEW! Guiso de Mondongo - classic Argentine winter stew 775cal 70g protein #protein #stew
4lbs Honeycomb Tripe (can purchase at Walmart, BJs Wholesale)
2 slices bacon - cut into strips
4oz Chorizo Colorado (Palacio brand Spanish Chorizo) available in most grocery stores
1 can Fire Roasted diced tomatoes
4c Beef Stock
1 can Pinto beans (10oz) drained
1/4c white wine
1 butternut squash - peel & cube
1/2 red bell pepper - dice
1/2 green bell pepper - dice
1 carrot - dice
1 large sweet onion - dice
2 garlic cloves
1TBSP pimenton (sweet paprika)
1/2tsp red pepper flakes
Salt & pepper to taste
1.Simmer with aromatics 4lbs tripe (peppercorns, bay leaves, vegetable scraps, 1TBSP salt, 6qt water, Parsley) for 1 hour until fork tender (do not overcook unless you like mushy texture)
2.Sear chorizo + bacon 5min - set aside and use leftover fat to sear all the veggies (except butternut squash!) sear veggies 10-20min the longer the better.
3.Add garlic saute 30 seconds
4.Deglaze white wine
5.Add back the meat and spices - cook 1 min
6. Add diced tomatoes and beef stock - cover and simmer 1 hour.
7.Add cubed squash cover and simmer 15min
8.Add drained beans last and just warm through
9.serve with lemon wedges
