🍪 Spiced Delight & Nutmeg-Filled Cookies, check caption

These cookies were born out of a “use-what-you-have” kitchen moment. A bit of leftover flour, some pantry staples, and a couple of delights cubes that I have since a long time untouched, turned into sweet little treats — soft, spiced, and perfect with tea.

Cook: 🌿
1.Mix the dry ingredients
In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, salt, and sugar.
2.Add the wet ingredients
Pour in the oil and a few tablespoons of plant milk. Mix until a soft, slightly sticky dough forms (add a touch more milk if too dry).
3.Shape the cookies
Roll dough into small balls (about the size of a walnut). Place on a lined baking tray. Gently press your thumb (or the back of a spoon) into the center of each cookie to make a small well.
4.Fill with delight
Spoon about ½ teaspoon of delight into each well.
5.Bake
Bake at 175–180 °C for 15–20 minutes, until lightly golden.
6.Cool & serve
Let cool slightly, then dust with icing sugar if you’d like.
