Nomally, we judge a pizzeria by its crust. Is it crunchy ?Does it hold
Up? Is it golden brown? Does it have some air bubbles?
I am using store-bought dough. Pour 1000g dough inside the bowl. Put our Modisho 5 Liter Dough Spiral Mixer.
Add 20g salt, 650g water, and we are ready to mix the dough.
Turn to speed 3, and mix them. We set the timer: 7 mins.
After the dough is done, we put them it the fridge for an hour.
Add 5g fresh yeast and mix again.We turn to speed 5 for mix for 8 mins.
When the dough is smooth, we turn to speed 3, add 50 ml water, and mix it for 3 mins till the water is totally absorbed.
We switch to speed 7 and mix for another 10 mins, and the pizza dough is ready.
We get the dough out of the bucket.
Spread some water on the board.
Roll the dough and put it in the box for an hour to ferment.
Powder the dough and board.
Cut it into 6, around 280g per one.
Roll the dough, and ferment it for an hour.
After that, we can make the pizza dough.
Add two spoons of pizza sauce and spread some cheese.
Add some salami, and we can bake the pizza now.
Preheated my oven to about 500°C for half an hour.
We set the upper heat 450°C, and the lower heat 380 °C, and bake it for 45 seconds or 60 seconds.
The salami pizza is ready to serve.
