CANADIAN Poutine. NEARLY ON THE FLOOR WITH THE GRAVY!

Being from Wales, UK. I've never heard of poutine so i thought i'd give it a go. I discovered you can use a variety of meats so i chose bacon and sausage, being from the uk we like our bacon and sausage. You are supposed to use canadian cheese curds but i thought light mozzarella was a good alternative. SORRY about the editing and quality i haven't got the best equipment. SERVES 2 GREEDY PEOPLE.
Ingredients you will need:
*Oil for frying..i used 1 litre into a wok, more if your using bigger.
* 6 medium potatoes
*4 shallots or 1 small onion
*4 spring onions
*3 slices of smoked bacon
*4 sausages (you could get spicy ones for extra punch)
*125g light mozzarella
*beef gravy of your choosing and however much you feel you need to give a nice coverage at the end.
*NOTE* You can add some cayenne pepper or chilli powder if you like to the chips..maybe a gentle coating through them only if you can handle spice!

METHOD* Cut spuds into chips skin on or off whichever you prefer.
* Cut your shallots and springs onions, stick them in a bowl.
*Whack your grill on medium to grill meat
*Heat your oil for the chippies
*Put meat into the grill *NOTE, sausages will take longer than bacon.
* once meat is cooked, chop into bite-sized chunks, if cooked before chips keep warm in a low oven till chippies are ready.
*while the meat was grilling, chuck your chips into fryer/wok in my case or if you are ovening chips put them in before meat.
*Lightly fry/sautee the onions until lightly golden just before meat and chips are ready.
*lay chips on a baking dish of your choosing, i would suggest a swallow one.
* scatter over chopped meat and onions
*scatter over mozzarella.
*into a pre-heated oven at 180c fan, 200 conventional for about 10/15 minutes but check it ain't burning at some point, this just to melt the cheese a bit and get everything back Piping hot!
While that was in the oven, heat a gravy of your choosing, enough to just cover the poutine.
*Stick it over the poutine and tuck in.
