My 'PALETTES' docs that you select the colors from are in RGB Mode. I recommend using RGB mode while you work and then changing to CMYK after if you are sending this to print, or placing the artwork after in your CMYK doc. Alternatively, you can change the Palette PSDs to CMYK before you start selecting the color, the colors will be slightly less vibrant.
