High Protein Salad At Home! 40g Protein

Ingredients:
For The Salad:
50g onion (chopped)
50g carrot (chopped)
100g cucumber (chopped)
100g tomato (chopped)
50g soya chunks (dry weight, boiled & roasted)
Fresh coriander leaves

For The Dressing:
80g low fat paneer
100g curd
10g cashews (soaked)
2 dry red chillies (soaked)
1 tbsp lemon juice
Salt & black pepper as per taste

Calories: 440 kcal
Protein: 42g
Carbs: 26g
Fat: 18g

Step-by-step:
- Boil the soya chunks, squeeze out the excess water and roast until slightly crispy.
- In a bowl, add onion, carrot, cucumber, tomato, roasted soya chunks and coriander leaves.
- For the dressing, add paneer, curd, soaked cashews, soaked red chillies, lemon juice, salt and black pepper into a blender jar.
- Blend everything until smooth and creamy.
- Pour the dressing over the salad and mix well.
- Serve fresh and enjoy.
