Today we're making a delicious and simple Bhandara-style pumpkin curry (Kaddu ki Sabzi) paired with crispy masala puris – just like the ones served during religious events and temple feasts! This satvik (no onion, no garlic) recipe is full of flavor and made with minimal ingredients.

🍛 Ingredients:
🔸 For Pumpkin Curry (Kaddu Ki Sabzi):
Pumpkin – 500 grams (chopped)

Mustard oil – 2 tbsp

Asafoetida (hing) – a pinch

Cumin seeds – 1 tsp

Green chilies – 2 (chopped)

Grated ginger – 1 tsp

Turmeric powder – 1/2 tsp

Coriander powder – 1 tsp

Red chili powder – 1/2 tsp

Dry mango powder (amchur) – 1 tsp

Salt – to taste

Jaggery – 1 tsp (optional, for a hint of sweetness)

Water – 1/2 cup (as needed)

Fresh coriander – for garnish

🔸 For Masala Puri:
Whole wheat flour – 2 cups

Carom seeds (ajwain) – 1/2 tsp

Red chili powder – 1/2 tsp

Salt – to taste

Oil – 1 tbsp (for moyan / shortening)

Water – for kneading

Oil – for deep frying

👩‍🍳 Instructions:
✅ Pumpkin Curry:
Heat mustard oil in a kadhai and add asafoetida and cumin seeds.

Add chopped green chilies and grated ginger, sauté lightly.

Add chopped pumpkin and all dry spices (turmeric, coriander, red chili, salt).

Mix well and cover. Cook on a low flame until the pumpkin turns soft.

Add amchur and jaggery, mix and cook for another 2–3 minutes.

Garnish with fresh coriander and serve hot.

✅ Masala Puri:
Mix flour, ajwain, chili powder, salt, and oil in a bowl.

Knead into a stiff dough using water.

Roll into small puris and deep fry in hot oil until golden and crisp.
