California Cabernet vs Bordeaux - what's the difference?

First of all, most Bordeaux has a much lower percentage of Cab in the blend. On the higher end Chateaux, 50-70% Cab is common in Bordeaux.

The biggest difference is the climates in California and Bordeaux. Cab in California has an easy time fully ripening, giving the wine more ripe, plush fruit characteristics.

In Bordeaux, it's not a guarantee that Cab will fully ripen. As a result, the wine tends to have more of a bright, fresh fruit flavor, with herbal and floral notes as well.
