THE ULTIMATE BURGER WITH FALLOW

Pickled Shallot
1kg of Banana Shallot
600g of White Wine Vinegar
300g of Water
125g of Caster Sugar
8g of Salt

Place the vinegar in a large saucepan and dissolve the sugar and salt inside. Then add the cold water to the pan to cool it down. Taste it to check the balance of acidity and then set it aside to cool down.
Peel all the shallots and then using a mandolin, very thinly slice the shallot into 1mm thick rings by holding the shallot by the root. Save the ends for making stock.
Take your sliced shallots and cover them with cold water and leave to soak for 5 minutes. Then wash them thoroughly to separate the rings to ensure an even pickling. Leave to drain in a colander.
Place the shallots in a container and cover them with the pickle. Leave to pickle for at least 24 hours before using.

Smoked Mayonnaise Burger Sauce
50g of Pasteurized Egg Yolk
25g of Dijon Mustard
8g of Kombu Seasoning
75g of Shallot Pickling Liquid (Liquid left after removing pickled shallots or onions.)
5g of Chardonnay Vinegar
450g of Rapeseed Oil

Place all of the ingredients into a Kitchen Aid mixing bowl apart from the oil.
Add the whisk attachment and whisk all the ingredients on full speed for 1 minute.
Very slowly, trickle feed in as it is mixing. Don’t go too quickly as the mayonnaise will be too loose.
Once all the oil is added, taste the mayonnaise for seasoning and then store in the fridge.

Burger Sauce
250g of Smoked Mayonnaise
40g of Tomato Ketchup
75g of Finely Chopped Gherkins
40g of Finely Chopped Pickled Shallots

Mix all this together and when it is ready, give it a taste and adjust the seasoning to your own taste.
